Chai Muffins

Ingredients:
FOR MUFFINS:
1/4 cup canola oil
1/2 cup milk
1 egg
1.5 cups flour
2 tsp baking powder
1/2 cup sugar
2 tsp Rose & Ruth’s Chai Masala
1/2 tsp salt

FOR CRUMBLE TOPPING, combine:
2/3 cup flour
1/4 cup brown sugar
2 & 1/2 Tbsp sugar
1/8 tsp salt
3 Tbsp unsalted butter, melted

Instructions:
1. Preheat oven to 400 degrees. Spray 6-7 muffin cups with cooking spray.
2. Whisk wet ingredients together: canola oil, milk, egg.
3. Whisk dry ingredients together: flour, baking powder, sugar, Rose & Ruth’s Chai Masala, salt.
4. Add dry ingredients into wet and stir until combined (don’t overmix!)
5. Scoop into muffin tins and top with crumble.
6. Bake for 18-20 minutes until golden brown on top.
7. Cool in the pan then on a wire rack. Eat and enjoy!
